Fattoush is a very famous Middle Eastern salad and is very nutritious. The traditional recipe calls for use of sumac, pita bread mint leaves as herbs for sure. Vegetables can be any but I used radish, tomatoes, and cucumber. Let’s dig in

  10. 1 lime juice
  11. 1/4 cup pomegranate molasses plus more if needed

  13. 1 tsp sumac powder soaked in 1/4 cup warm water and not hot water
  14. As per taste Salt
  15. As required Pepper
  16. as required Oil to fry Pita bread
  17. As required Garnish with Pomegranate seeds and mint leaves

Instructions to make to make Fattoush

  1. Wash the cucumber, tomato, radish. Cut the cucumber horizontally and then cut into 2cm slices, cut the tomato into quarters, cut the radish into thin slices after peeling the skin. Cut the lettuce into thin lengths and then into squares.
  2. Take the Pita bread and cut it into lengths with a 1” gap, cut into squares with 2cm size.
  3. In a pan heat oil and fry the small Pita bread squares on medium flame. Fry for 5 seconds on each side and drain into a kitchen towel to extract the extra oil.
  4. For the dressing - in a bowl add olive oil, soaked sumac powder in water, lime juice, pomegranate molasses, add sugar if needed. Add salt and pepper
  5. Cut the parsley and mint leaves fine
  6. Assembling All - in a bowl first add lettuce, thinly cut cucumber, thinly cut radish, cubed tomatoes, add chopped mint leaves and chopped parsley leaves, salt, and pepper. Mix
  7. If consuming immediately add a little salad dressing and mix well. If having later then added later. Add fried pita bread and then add salad dressing. Mix well
  8. Plate with pomegranate seeds and a mint leaf. Enjoy.
